Banana and Pecan Muffin

Banana & Pecan Muffin


300g  or 2  I/2 cups plain flour
3 tsp baking powder
100g or 1/2 cup butter or margarine
260g  or 1 1/3 cup castor sugar
2 tsp vanilla extract
6 bananas mashed
100g or 1 cup of chopped pecan nuts
140ml or 8 tbsp milk

1. Preheat the oven to190 C or gas 5. Seive together flour and baking powder.
2. Cream butter together with electric mixer. Add eggs and vanilla and beat until fluffy. Mix in bananas.
3. Add the pecan nuts.
4. With mixer in low speed, add flour mixture alternate with milk
5. Spoon the mixture into muffin cups, filling them two-thirds full. Bake the muffins until golden brown or until skewer inserted into the center comes out clean, about 25- 30mins.

* 1. Makes 16 in deep muffin cups or 23 in paper cups.
   2. It turns out to be a little too sweet. There is a need to lessen the sugar.

The muffin is a bit hard, not soft and fluffy.
