Simple Home Roast Chicken


Cook what today? This is the question most housewives face everyday. So do I! 
I bought 2 chicken legs yesterday and was wondering whether I should cook the usual chicken soup, or soy sauce chicken or sweet sour chicken. Then I said to myself, why don't I  marinate the chicken overnight first. Then try roasting it for a change. This is a slightly spicy roasted chicken. Add more curry powder if you prefer more spiciness. 
So, I marinated this two chicken legs overnight in fridge. Sorry no photos as I didn't plan to blog about it initially. Just put it in a closed container (Tupperware), then in the normal cool compartment not the freezer compartment. 

One hour before before cooking, coated it with oats for crispiness, add chopped onions and garlic for fragrance. Below is this simple recipe. Do comment below if you need further clarification.

Recipe:
1. Season the chicken leg overnight with 1 tbsp curry powder, a pinch of salt n sugar.
2. Before cooking, add 1 tsp of chopped ginger,1 tsp of chopped onions, 2 Tbsp oats, 1 tsp corn starch, 1 Tbsp all purpose flour, 1 Tbsp honey and 1 tsp soy sauce. Rub it in all over.
3. Cover fully with baking paper. (Here I would normally use baking paper instead of aluminium foil due to the belief that food cooking in high heat inside enclosed aluminium maybe bad for health)
4. Bake 20 - 30 mins at 200C, depending on the size of your oven.


5. Then open the paper. Grill 5 minutes on each side for color and crispness.


6. Serve n enjoy 😋

Yay, I was happy that it turned out so nice! The meat is well seasoned, soft and moist. There are some crisp from the oats, and the onions and garlic gives out fragrance after the grill.
